Well it's Canada Day long weekend up here, and with that, comes our annual "Wing Ding" Chicken wing sauce cook off. Just a fun little contest we started with our core group of friends.

Pretty straight forward, I buy a ton of chicken wings, fire up the outdoor deep fryers, cut lots of fries and everyone brings side dishes and their sauce entry for the year (11 Couples plus kids). The inflatables and pools are all setup for the kids and the coolers are loaded with ice and our favorite beverages :)

Judging is straight forward, Just cast a vote for your favorite, and can't vote for yourself, and wouldn't you know it, the host (yours truly) won this year :)

As an added bonus, I deep fried the 12LB Jake I shot this spring, and everyone gobbled (pun intended) it up as well. :)

Figured I would share my "Award Winning" sauce entry for this year, in case you were looking to mix things up a bit with your own wings.

  1. Add the following to a bowl:

    1/4 Cup of Sour Cream
    1/4 Cup of Cream Cheese
    1 Cup strong Blue Cheese

  2. Using a blender, mixer, whatever, mix it well until its smooth and creamy like a puree and set aside.
  3. In a shallow pan/dish combine the following:

    4 Tblsp Corn Starch
    2 Tblsp Flour
    1 Tsp Salt
    1 Tsp Pepper

  4. Rinse and dry the wings, then one by one grab a handful of the cheese/sour cream puree and hand spread it (thinly) on the wings, ensuring you coat it all, once you have all wings coated, roll them around in the dry mix ensuring they are all coated, then put in the fridge for about a half hour.
  5. Now for the sauce,

    In a sauce pan on the stove over medium heat, melt 4Tbsp of butter, once melted add the following:

    1/2 Cup Franks Red hot Sauce
    2 Tblsp Honey
    Lemon Juice to taste
  6. Simmer until good and hot, and keep warm
  7. Throw the wings in a deep fryer with peanut (my preference) oil heated to 350, cook until golden brown. Remove, gently paper towel off excess grease, put in bowl and pour in warm sauce, toss and serve!

Peanut Oil (Or other preferred oil)
