Pulled out a few packages of ground venison to make up a batch of chili today, or, for you Big Bang Theory fans, as Sheldon points out to Priah, that there are no beans in Chili, but it was a delicious bowl of, “whatever this is”.

This one is a little different as it contains some vegetables, but is delicious.

  1. Heat up 1 Tbsp. of vegetable oil in a large pot, add venison and cook until brown, then remove venison, drain, and set aside.
  2. Add the remaining 1Tbsp of oil, and heat over medium, add Onion, Carrots, Celery and Green Pepper, cook while stirring until softened, but not browned.
  3. Stir in spices and mix well with vegetables, continue to stir over medium heat until spices become toasted, and fragrant.
  4. Add venison and mix well, then add remaining liquid ingredients, beer, molasses, and crushed tomato's, blending well. Bring mixture to a boil, then place a lid and reduce heat to simmer, let simmer for 40 minutes.
  5. At the 40 minute mark, add beans, mix well, replace lid and simmer for another 20 minutes.
  6. Serve to your liking,

    I like to add a few shots of hot sauce to my personal bowl, as well as some pickled jalapeno's, a handfull of shredded habanero cheese, a good dollop of Sour Cream, and eat with nacho chips.

    Only 3 degrees today, windy, rainy, perfect chilli day! Took it out of the freezer this morning, got off the road tonight, warmed up a bowl, tossed in a few handfuls of Jalapenos, a good handful of cheese, few dollops of sour cream, and it was delicious.

Ingredients

2 Tbsp. Vegetable Oil
2Lbs Ground Venison
1 Large Onion, Diced
2 Stalks of Celery
1 Carrot peeled, and diced
1 Green Pepper, seeded and diced
2 Large Garlic Cloves, minced
2 Tbsp. Ground Cumin
2 Tbsp. Ground Coriander
2 Tbsp. Paprika
1 Tsp. Ground Black Pepper
1 Tsp. Salt
1 Bottle of Beer
2 Tbsp. Molasses
2 28oz Cans of Crushed Tomato’s
2 19 oz. Cans of Kidney Beans (I like six bean medley)
